Meet Samantha, Our Campus Registered Dietitian

DietitianInterested in learning more about nutrition? Samantha, our campus registered dietitian is here to answer all of your questions! Samantha is a dietitian who specializes in a variety of nutrition related areas including food allergies and chronic illness. Samantha received her Bachelor of Science in Culinary Nutrition Clinical Dietetics from Johnson & Wales University in Providence, RI. She is a Charger Alumni and completed a comprehensive community nutrition & wellness internship and earned her Master’s degree from the University of New Haven. Samantha has a passion for leading a healthy lifestyle and empowering people of all ages to reach their healthiest potential through food and nutrition. She believes disease prevention starts in the kitchen and drives academic success. When working with students to help them achieve their individual wellness goals, she uses a real-life approach that encourages them to strive for progress and not perfection. Small changes every day are all it takes to make a significant health impact towards a healthy lifestyle. Another important part of our focus on health and wellness is the use of seasonal menus, featuring fresh and healthy ingredients - many of which are grown by local or regional farmers. Every season has its own unique produce that is showcased in delicious signature dishes to highlight the distinct flavors and natural appeal of seasonal items. For students who have special dietary and nutritional needs we have informational resources and customized menus to address your needs. Mindful is Sodexo's health & wellness approach that helps you make healthy choices second nature! We are committed to creating healthy environments for our customers. Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!

Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.

My Zone

My Zone is our campus "pantry" where food items needed by students with Celiac disease or nut allergies are stored and prepared with precautions against cross-contact. This area is free of tree nut, peanut and gluten-containing ingredients and products. My Zone is located in the Marketplace dining area of Bartels Hall.  

Simple Servings

Located in the Marketplace, Simple Servings is our allergen-safe, dining option for our customers with food allergies or gluten intolerance. This station offers food free from peanuts, tree nuts, shellfish, wheat, soy, milk products, eggs, and gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contact with food allergens. The campus dining team is committed to providing you with safe, delicious choices to accommodate your needs. Students with food allergies and dietary restrictions are invited to meet with our Registered Dietitian, General Manager, and Executive Chef so we can help you make the most of your dining experience.

Separate equipment, storage areas, utensils and preparation areas minimize, but do not totally eliminate, the chances of gluten and allergens in our Simple Servings foods. 75% of Simple Servings items also meet our Mindful criteria, which makes it an easy and healthy choice for customers who are focused on ingredients and portion size to control weight, blood sugar and other health issues.   

VegetarianMenu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.

VeganVegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
